Ingredients
- 1 zucchini (approx. 175g grated weight)
- 4 spring onions, finely chopped
- 225g self-raising flour
- 1 roasted red pepper from a jar, drained and finely chopped
- 100g Parmesan, finely grated
- a few sprigs of rosemary, needles picked off and finely chopped
- 2 eggs, beaten
- 90 ml sunflower oil
- 50-100 ml whole milk
Preparation steps
- Preheat the oven to 200°C/180°C fan/gas 6.
- Line an eight-cavity muffin tin with muffin cups.
- Grate the zucchini coarsely into a fine sieve.
- With clean hands, squeeze as much liquid as possible over the sink.
- Place the grated zucchini in a bowl.
- Add scallions, flour, roasted red peppers, most of the cheese, and rosemary to the bowl.
- Season with plenty of black pepper and a pinch of salt.
- Crack the eggs into a jug.
- Fill in oil.
- Fill with enough milk to make 300 ml.
- Stir the mixture until well blended.
- Pour the egg mixture into the zucchini mixture.
- Mix everything until a smooth dough forms.
- Divide the batter between the muffin cups.
- Top each muffin with remaining cheese.
- Bake in the preheated oven for 25-30 minutes.
- Remove from the oven when the muffins are risen, firm and golden brown on top.
- Let the muffins cool completely on a wire rack.
- Store the muffins in an airtight container in the refrigerator for up to three days.
