Ingredients
- some butter for the cans
- 200g hazelnuts
- 25g powdered sugar
- 6 egg whites
- 450g golden powdered sugar
- 1 tsp vanilla extract
- ½ tsp white wine vinegar
- 200 g dark chocolate, chopped
- 400 ml extra thick double cream
- 200g raspberries
Preparation steps
- Preheat the oven to 190°C/170°C fan/gas 5.
- Grease the bottom and sides of 2 x 20 cm springform pans and line them with baking paper.
- Finely grind the hazelnuts and powdered sugar in a food processor.
- Beat the egg whites until stiff, add half of the icing sugar and beat again until stiff, then repeat with the remaining icing sugar.
- Fold in the vanilla, vinegar and peanut mixture until well combined.
- Divide the mixture between the tins and bake for 25-30 minutes, until the surface feels firm.
- Remove and let cool in the tins on a wire rack. The meringues are very fragile and might burst a little, but don’t worry.
- While the meringues are cooling, prepare the chocolate cream.
- Melt the chocolate in a bowl over a pan of barely simmering water and then remove from the heat.
- Allow to cool slightly, then stir in the cream and leave to solidify in a cool place.
- Carefully remove the cooled meringues from the molds and place in a layer on a serving plate.
- Lightly mash half of the berries with a fork.
- Using a spatula, spread half of the chocolate cream over the meringue and spoon over the berries.
- Cover with the remaining layer, then cover with chocolate cream and decorate with the remaining berries.
- Refrigerate until serving.
