  • some butter for the cans
  • 200g hazelnuts
  • 25g powdered sugar
  • 6 egg whites
  • 450g golden powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp white wine vinegar
  • 200 g dark chocolate, chopped
  • 400 ml extra thick double cream
  • 200g raspberries

Preparation steps

  1. Preheat the oven to 190°C/170°C fan/gas 5.
  2. Grease the bottom and sides of 2 x 20 cm springform pans and line them with baking paper.
  3. Finely grind the hazelnuts and powdered sugar in a food processor.
  4. Beat the egg whites until stiff, add half of the icing sugar and beat again until stiff, then repeat with the remaining icing sugar.
  5. Fold in the vanilla, vinegar and peanut mixture until well combined.
  6. Divide the mixture between the tins and bake for 25-30 minutes, until the surface feels firm.
  7. Remove and let cool in the tins on a wire rack. The meringues are very fragile and might burst a little, but don’t worry.
  8. While the meringues are cooling, prepare the chocolate cream.
  9. Melt the chocolate in a bowl over a pan of barely simmering water and then remove from the heat.
  10. Allow to cool slightly, then stir in the cream and leave to solidify in a cool place.
  11. Carefully remove the cooled meringues from the molds and place in a layer on a serving plate.
  12. Lightly mash half of the berries with a fork.
  13. Using a spatula, spread half of the chocolate cream over the meringue and spoon over the berries.
  14. Cover with the remaining layer, then cover with chocolate cream and decorate with the remaining berries.
  15. Refrigerate until serving.
