- 4 ham hocks, smoked or unsmoked, without rind (you can have this done by a butcher)
- 4 clementines, halved
- ½ tsp ground allspice
- ¼ freshly grated nutmeg
- 2 star anise
- 3 bay leaves
- 4 tbsp Dijon mustard
- 2 tbsp black treacle
- 6 tbsp soft light brown sugar
- The day before, soak the ham hocks in water overnight in the fridge to remove some of the salt (they may have already been soaked by the butcher, so check beforehand).
- The next day, drain the shanks and pat dry.
- Preheat the oven to 160°C/140°C fan/gas 3.
- Mix the allspice, nutmeg and 1/4 teaspoon freshly ground black pepper and rub into the shanks.
- Place the shanks, cut side up, in a deep roasting pan along with the clementines.
- Place star anise and bay leaves around the ankle joints.
- Pour in 200 ml of water.
- Cover the dish with foil and roast for 3 hours.
- Remove the dish from the oven and increase the heat to 180°C/160°C fan/gas 4.
- Unpack the can and allow the liquid to drain.
- Squeeze the juice from the clementines over the shanks and return the juiced halves to the can.
- Mix Dijon, treacle and sugar in a bowl.
- Spread half of the glaze over the entire hocks.
- Place back in the oven for 15-20 minutes, turning every 5 minutes and brushing with the remaining glaze, until the shanks are browned and caramelized in spots.
- Shred or slice the meat and eat warm or cold.
