  • 1 small red cabbage (approx. 900 g), cut into 4 x 2 cm thick “steaks”.
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp fennel seeds
  • 1 tbsp dark muscovado sugar
  • 2 x 250g bags of fully cooked quinoa
  • Juice 1 orange
  • small packet of flat-leaf parsley, chopped
  • small packet of dill, chopped
  • 50g dried sour cherries, roughly chopped
  • 250g pack of halloumi, cut into 8 slices

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6
  2. Line a baking tray with baking paper and place the cabbage steaks on it
  3. Mix balsamic vinegar, oil, fennel seeds and sugar
  4. Season the mixture and pour it over the cabbage
  5. Cover the cabbage with foil and roast for 20 minutes
  6. Remove the foil and cook for another 10 minutes until tender
  7. Heat the quinoa according to the package instructions
  8. Stir in orange juice, parsley, dill and cherries
  9. Season the quinoa with black pepper
  10. Fry the halloumi in a dry pan over medium heat for 2 minutes on each side until golden brown
  11. To serve, place a spoonful of quinoa on each cabbage steak
  12. Top with the halloumi
