  • 4×175-200g/6-7oz haddock fillets
  • 2 tbsp Ras-El-Hanout spice mix
  • 400g couscous
  • 25g unsalted butter
  • 1 large onion, finely chopped
  • 50g pine nuts
  • 50g sultanas
  • Finely grated zest and juice 1 large orange
  • small handful of flat-leaf parsley, chopped

Preparation steps

  1. Preheat the oven to fan oven 170°C/bottom heat 190°C/gas 5.
  2. Rub the haddock fillets with the spice mixture and set aside.
  3. Place the couscous in a large heatproof bowl.
  4. Pour 500 ml of boiling water over it and let it soak for 5 minutes.
  5. Melt the butter in a frying pan and lightly fry the onion for 5 minutes, until soft and golden brown.
  6. Remove from heat and stir in pine nuts and sultanas.
  7. Fluff the couscous with a fork.
  8. Add onion mixture, orange zest and juice, and half the parsley.
  9. Mix well and season with black pepper.
  10. Place the couscous mixture in a roasting tray and level the surface.
  11. Arrange the fish fillets on the couscous.
  12. Cover loosely with a large piece of foil.
  13. Bake for 15-20 minutes. At this point the fish should be cooked – this depends on the thickness of the fillets.
  14. To check, the flesh should look opaque and flake easily when poked with a fork.
  15. Serve immediately, sprinkled with the remaining parsley.
