Grilled salmon with kale and Noilly Prat sauce

  • 4 x 175-200g/6-8oz pieces of thick salmon fillet, skinned
  • 50g butter, melted
  • 140g kale, chopped
  • steamed waxy new potatoes for serving
  • 600 ml fish stock
  • 4 tbsp double cream
  • 4 tbsp Noilly Prat (dry white vermouth)
  • 85g chilled unsalted butter, cut into small pieces
  • 1 tsp fresh thyme leaf

Preparation steps

  1. Preheat the grill to the highest setting.
  2. To prepare the sauce: Place the stock, cream and Noilly in a medium-sized saucepan and bring to the boil quickly until the quantity is reduced by three quarters. Turn off heat and keep warm.
  3. Brush the salmon on all sides with half of the melted butter and season. Place on a lightly buttered baking sheet and grill for 8 minutes, until just cooked through.
  4. While the salmon is cooking, bring a large pot of salted water to a boil, add the kale and cook for 3-4 minutes. Remove, drain well and return to the pan, then add the remaining melted butter and mix. Cover the pan to keep warm.
  5. Bring the sauce to the boil and then stir in the cooled butter, piece by piece. Stir in the thyme and season to taste.
  6. To serve, divide the kale between 4 preheated plates and place a piece of salmon on each. Pour some of the sauce over the fish and spread the rest around the kale.
  7. Serve with steamed new potatoes and the remaining sauce in a small jug.
