Frozen fish
Fish expert CJ Jackson says flash-frozen fish can be a better buy than fresh. It is often cheaper and can be “fresher than fresh”. It’s also great for keeping in the freezer and can be prepared from frozen.

Preparation steps

  1. Heat the grill to high and brush a sturdy baking sheet with oil.
  2. In a large bowl, mix soy, mirin, sugar, ginger and garlic until sugar is dissolved.
  3. Toss the frozen salmon in the soy mixture until coated.
  4. Pour the remaining marinade into a small saucepan and bring to the boil.
  5. Place the tray about 10cm from the heat and grill for 20 minutes.
  6. Brush the fish with the simmering marinade every few minutes until cooked and glazed. If the fillets are thick, you may need to turn them on their side.
  7. Remove the salmon from the grill.
  8. Simmer the marinade until sticky and then pour over the cooked salmon.
  9. For the cucumber salad, peel the cucumber into slices using a swivel knife peeler.
  10. Prepare the dressing by mixing the vinegar with the soy sauce, sugar and sesame seeds.
  11. Mix the cucumber with the dressing.
  12. Serve the cucumber salad with salmon and cooked rice.
