Grilled fajita steak

  • 4 beef steaks, preferably rib-eye steak, approx. 250 g each
  • 8 flour tortillas, plus any toppings for serving
  • 150 ml sour cream (optional)
  • Juice of 6 limes
  • 2 tbsp olive oil
  • 4 garlic cloves, crushed
  • 2 tsp dried oregano
  • 4 tsp ground cumin
  • 2 teaspoons freshly ground black pepper
  • small bunch of coriander, finely chopped

If it’s not grilling weather, grill the steaks in a hot grill pan.

Preparation steps

  1. Mix all the ingredients for the marinade in a bowl.
  2. Place the steaks in a shallow bowl or tray.
  3. Pour the marinade over the steaks.
  4. Turn the steaks over so that they are completely coated with the marinade.
  5. Let the steaks stand for at least 1 hour or cover and refrigerate for up to 24 hours.
  6. Heat the grill.
  7. Wipe off any excess marinade from the steaks.
  8. Cook the steaks on medium for 3 minutes on each side, or longer if desired.
  9. Let the steaks rest for 5 minutes.
  10. Cut the steaks into thick slices.
  11. Heat 8 large flour tortillas on the grill.
  12. Spread mashed black beans on the tortillas.
  13. Place steak slices, onions and peppers on the tortillas.
  14. Add pico de gallo, guacamole and sour cream if desired.
  15. Roll up the tortillas.
  16. Enjoy the fajitas with a glass of michelada!
