  • 225g new potatoes, cut into pieces
  • 100 g green beans, cleaned and halved
  • 1 tbsp vegetable or sunflower oil
  • 1 garlic clove, minced
  • 1 heaped tablespoon or 4 teaspoons Thai green curry paste (the tablespoon won’t fit in some jars)
  • 400 ml can of coconut milk
  • 2 tsp Thai fish sauce
  • 1 tsp powdered sugar
  • 450g boneless, skinless chicken (breasts or thighs), cut into bite-sized pieces
  • 2 fresh kaffir lime leaves, finely chopped, or 3 wide strips of lime peel, plus something to garnish
  • a good handful of basil leaves
  • cooked rice for serving


Coconut milk
Some cans of coconut milk are already homogenized, meaning the cream and milk are mixed. If so, skip the coconut cream step and fry the paste straight away – it contains oil so you don’t need to add anything else. In step 4, add all the milk at once.

Preparation steps

  1. Place the potatoes in a pot of boiling water and cook for 5 minutes.
  2. Add the beans and cook for another 3 minutes. At this point both should be just tender but not too soft.
  3. Drain and set aside.
  4. Heat the oil in a wok or large frying pan until very hot, then add the garlic and cook until golden brown. This should only take a few seconds.
  5. Add the curry paste and stir for a few seconds to allow the spices to begin cooking and release all the flavors.
  6. Pour in the coconut milk and let it bubble.
  7. Stir in the fish sauce and sugar, then add the chicken pieces.
  8. Reduce heat to simmer and cook, covered, until chicken is cooked through, about 8 minutes.
  9. Add the potatoes and beans and let them warm in the hot coconut milk.
  10. Add a nice citrus flavor by stirring in the crushed lime leaves (or lime zest).
  11. Next add the basil leaves, but only leave them on the stove for a short time or they will quickly lose their brightness.
  12. Sprinkle with the lime garnish and serve immediately with cooked rice.
