  • 2 bananas, sliced
  • 1 ripe avocado, pitted, peeled and cut into pieces
  • 1 small ripe mango, pitted, peeled and cut into pieces
  • 100g spinach (fresh or frozen)
  • 250 ml milk (unsweetened almond or coconut milk works well)
  • 1 tablespoon unsweetened almond or peanut butter
  • 1 tbsp clear honey, agave or maple syrup (optional)
  • 1 tbsp chia seeds
  • 1 tbsp flaxseed
  • 4 tbsp pumpkin seeds
  • 4 tbsp sunflower seeds
  • 4 tbsp coconut flakes
  • 4 tbsp almond flakes
  • ¼ tsp ground cinnamon
  • 2 tablespoons clear honey, agave or maple syrup
  • 175g mixed fresh fruit, chopped (we used banana, mango, raspberries and blueberries)

Preparation steps

  1. Cut the bananas into slices and arrange them on a small baking tray lined with baking paper.
  2. Freeze the bananas for 2 hours until firm.
  3. If desired, transfer the frozen banana slices to a freezer bag and freeze for up to 3 months.
  4. To prepare the seed mixture, preheat the oven to 180°C/160°C fan/gas mark 4 and line a baking tray with baking paper.
  5. In a bowl, mix seeds, coconut, almonds and cinnamon.
  6. Drizzle honey, agave syrup or maple syrup over the mixture and stir until everything is well coated.
  7. Spread the seed mixture evenly on the prepared baking sheet.
  8. Bake for 10-15 minutes, stirring every 5 minutes, until the seeds are lightly toasted.
  9. Allow the seed mixture to cool and store in an airtight container for up to a month.
  10. In a blender, combine avocado, mango, spinach, milk, nut butter, frozen banana slices, and honey (if using).
  11. Blend until the mixture reaches a thick smoothie consistency, scraping down the sides of the blender as needed.
  12. Divide the smoothie mixture between two bowls.
  13. Arrange the fruit on each bowl.
  14. Sprinkle 1-2 tablespoons of the seed mixture over each bowl.
