- 750g new potatoes, cut lengthwise into thick slices
- 2 tbsp olive oil
- 8 chicken thighs, with skin and bones
- 300g cherry tomatoes
- 100g black olives
- ½ small pack of oregano, leaves picked off
- 200g pack of feta, crumbled into pieces
- 2 tbsp red wine vinegar
- Preheat oven to 200°C/180°C fan/gas 6.
- Place the potatoes in a roasting pan and drizzle with half the oil.
- Place the chicken thighs on top of the potatoes.
- Drizzle over the remaining oil and season the chicken thighs.
