  • 750g new potatoes, cut lengthwise into thick slices
  • 2 tbsp olive oil
  • 8 chicken thighs, with skin and bones
  • 300g cherry tomatoes
  • 100g black olives
  • ½ small pack of oregano, leaves picked off
  • 200g pack of feta, crumbled into pieces
  • 2 tbsp red wine vinegar

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Place the potatoes in a roasting pan and drizzle with half the oil.
  3. Place the chicken thighs on top of the potatoes.
  4. Drizzle over the remaining oil and season the chicken thighs.
  5. Roast in the oven for 30 minutes.
  6. Add cherry tomatoes, olives, oregano leaves and feta to the roasting pan.
  7. Drizzle the mixture with red wine vinegar.
  8. Place the roasting pan back in the oven for another 25-30 minutes.
  9. Check that the chicken thighs are cooked through and golden brown before removing them from the oven.
