Greek roast lamb

Ingredients
- 1 large leg of lamb, about 3kg
- 6 cloves of garlic
- 1 bunch of oregano
- Zest and squeeze 1 lemon
- 6 tbsp olive oil
- 1½ kg new potatoes
- 400 g canned chopped tomatoes
- large handful of pitted baby kalamata olives
Tip

Mix 100 ml olive oil with 2 tablespoons of white wine
Vinegar. Finely grate 2 romaine lettuce and cut into thin slices
6 spring onions and sprinkle 100g feta on top
Cheese. Mix everything together just before serving.
Preparation steps
- Preheat the oven to 240°C/fan 220°C/gas 9.
- Crush the garlic, half of the oregano, the lemon peel and a pinch of salt in a pestle and mortar.
- Add the lemon juice and a dash of olive oil to the herb mixture.
- Prick the lamb all over with a sharp knife.
- Squeeze as much herb paste as possible into the holes in the lamb.
- Place the potatoes in a large roasting pan with the remaining olive oil and remaining herb paste.
- Place the lamb between the potatoes in the roasting pan.
- Roast for 20 minutes at the initially high temperature.
- Reduce the temperature to 180°C/fan 160°C/gas mark 4 and roast for 1 hour and 15 minutes for medium-rare lamb. Add another 15 minutes if you prefer medium.
- Drizzle the lamb once or twice with the pan juices and stir the potatoes while cooking.
- When the lamb is done to your liking, remove it from the mold and let it rest.
- Add the remaining oregano to the potatoes and keep warm.
- Place the roaster on a medium flame.
- Add the canned tomatoes and olives to the pan juices and simmer for a few minutes.
- Serve the lamb with potatoes, gravy and a simple salad.
