Ingredients
- 300g fusilli pasta spirals – or you can use farfalle (butterflies) or penne (quill pens).
- 225g bag of prepared fresh baby spinach
- 250 g punnet-shaped cherry tomatoes, halved
- 100 g black olives (we bought kalamata at the deli counter)
- 200 g feta cheese, broken into coarse pieces
- 3 tbsp olive oil
Preparation steps
1. Place the fusilli in a large pot of boiling salted water and cook for 10 minutes.
2. Add the spinach, stir well and cook for another 2 minutes.
3. Drain the pasta and spinach in a colander and allow to drain.
4. Place tomatoes, olives and feta in a large bowl.
5. Grind lots of black pepper over the ingredients in the bowl.
6. Drizzle olive oil over the ingredients in the bowl.
7. Fold in the drained pasta and spinach.
8. Allow everyone to help themselves to the Greek pasta salad.
