- 800g potatoes, an all-rounder like Maris Piper is ideal
- 200g Gravadlax
- 2 onions
- 284ml carton of double cream
- 150g milk
- Peel the potatoes and cut them into very thin chips. This is easy with a mandolin; otherwise, slice thinly, stack and cut the stack into sticks. Place the chips in a bowl and cover with cold salted water.
- Cut the Gravadlax into wide strips.
- Chop onions finely.
- Melt a large piece of butter in a small pan, add the onion and fry for 5 minutes.
- Butter the inside of a 1.2 liter shallow ovenproof dish.
- Preheat the oven to 190°C/fan 170°C/gas 5.
- Drain the potatoes and spread one third over the dish. Season well.
- Scatter half of the gravadlax and onion over the top and cover with another third of the potatoes.
- Sprinkle over remaining gravadlax and onion.
- Cover with the remaining potatoes and season well.
