Ingredients

  • 800g potatoes, an all-rounder like Maris Piper is ideal
  • 200g Gravadlax
  • 2 onions
  • 284ml carton of double cream
  • 150g milk

Preparation steps

  1. Peel the potatoes and cut them into very thin chips. This is easy with a mandolin; otherwise, slice thinly, stack and cut the stack into sticks. Place the chips in a bowl and cover with cold salted water.
  2. Cut the Gravadlax into wide strips.
  3. Chop onions finely.
  4. Melt a large piece of butter in a small pan, add the onion and fry for 5 minutes.
  5. Butter the inside of a 1.2 liter shallow ovenproof dish.
  6. Preheat the oven to 190°C/fan 170°C/gas 5.
  7. Drain the potatoes and spread one third over the dish. Season well.
  8. Scatter half of the gravadlax and onion over the top and cover with another third of the potatoes.
  9. Sprinkle over remaining gravadlax and onion.
  10. Cover with the remaining potatoes and season well.
  11. Heat the cream and milk in a small saucepan until simmering, then pour over the potatoes.
  12. Brush the top with butter and bake for 1 hour, until the potatoes are tender and the top is golden brown.
  13. Allow to cool for 5 minutes before serving with a green vegetable such as broccoli or snap peas.
