Grain soda bread with hummus and tomatoes

Ingredients

  • 1 tsp olive oil
  • 8 x 80g portions of cherry tomatoes, on stem or stemless
  • 12 slices of seeded soda bread (see “goes well with this” below)
  • 4 tsp four-seed mix (sunflower, pumpkin, sesame and golden flax seeds)
  • 2 x 400g cans of chickpeas
  • 2 tbsp lemon juice
  • 2-3 tsp ground coriander
  • 1-2 tsp cumin
  • 1 heaped tablespoon of tahini
  • 2 tbsp extra virgin olive oil

Preparation steps

  1. Make the hummus first.
  2. Place all ingredients in a bowl.
  3. Puree the ingredients with a hand blender.
  4. Add 4 tablespoons of water from the canned chickpeas.
  5. Continue stirring until the mixture is smooth.
  6. Let the hummus cool until needed.
  7. Heat the oil in a large non-stick frying pan.
  8. Add the cherry tomatoes in batches (on the vine or without the stem).
  9. Cook the tomatoes over medium heat.
  10. Cook until the tomatoes appear to burst.
  11. To serve breakfast to two people as part of the healthy eating plan, toast three slices of bread.
  12. Spread a quarter of the hummus on the toast.
  13. Top the toast with a quarter of the tomatoes.
  14. Sprinkle ½ teaspoon of the seeds over the toppings.
  15. Halve each slice of toast.
  16. Serve 3 slices of toast per person.
  17. Keep remaining bread, hummus and tomatoes refrigerated.
  18. Use remaining ingredients to serve on three consecutive mornings.
  19. Bread, hummus and tomatoes will keep refrigerated for up to four days.
