  • 250 g powdered or granulated sugar
  • 3 large lemons and more for serving
  • 350g gooseberries with heads and tails, then halved
  • Mint leaves from 3 sprigs, plus extra for serving
  • Ice and mineral water to serve

Preparation steps

  1. In a large pan, carefully melt the sugar in 250 ml water.
  2. Meanwhile, use a vegetable peeler to cut a few long strips of lemon peel.
  3. Squeeze the juice to make about 100ml.
  4. Add the zest, juice, gooseberries and mint leaves to the pan and bring to the boil.
  5. Cook for 5-10 minutes until the gooseberries are very soft, then mash with a potato masher and allow to cool.
  6. Strain through a sieve, squeeze the pulp well to extract the juice, then allow to cool thoroughly.
  7. To serve, dilute 4 tablespoons of the lemonade base with 100ml mineral water (or to taste) and add additional ice, lemon and mint.
