Ingredients

  • 200g unsalted butter, softened, plus some butter for the tin
  • 200g golden powdered sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 200g plain flour
  • 2 teaspoons of baking soda
  • 50g ground almonds
  • 100 ml sour cream
  • 60g plain flour
  • 50g cold, unsalted butter, cut into cubes
  • 60g golden powdered sugar
  • 60g porridge
  • 25g almond flakes
  • 500g fresh or frozen gooseberries (see tip below; a mix of green and pink if available)
  • 2 tbsp powdered sugar

Preparation steps

  1. Mix the gooseberries and sugar in a bowl, lightly mashing the berries. Set aside to macerate.
  2. Mix flour and butter in a small bowl until mixture resembles breadcrumbs.
  3. Stir sugar, oat flakes and almonds into the flour-butter mixture.
  4. Knead the mixture with your hands to form a loose dough. Refrigerate for at least 30 minutes or up to a day.
  5. Preheat the oven to 180°C/160°C fan/gas 4. Grease and line a 23cm loose-bottomed cake tin with baking paper.
  6. In a stand mixer or with an electric whisk, beat butter, sugar and vanilla until fluffy.
  7. Add the eggs one at a time, beating well after each addition. Add a spoonful of flour between each addition to prevent curdling.
  8. Fold in remaining flour, baking powder, ground almonds and sour cream until well combined.
  9. Pour the dough into the prepared pan and top with the gooseberry filling.
  10. Sprinkle the sprinkles over the surface of the cake to cover the filling.
  11. Bake for 1 hour to 1 hour and 10 minutes, or until a skewer inserted into the center comes out clean.
  12. If the cake browns too quickly, cover it with foil for the last 15 minutes of baking.
  13. Allow the cake to cool completely in the pan, then refrigerate until just cold to make cutting easier.
  14. The prepared cake will keep in an airtight container for up to three days.

  • 25g almond flakes

  • 2 tbsp powdered sugar

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease a 9-inch cake pan with butter and line the bottom with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and golden powdered sugar until light and fluffy. Add the vanilla extract and beat in the eggs one at a time until well combined.
  3. In a separate medium-sized mixing bowl, stir together the flour, baking powder and ground almonds. Gradually add this dry mixture to the butter mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until well combined.
  4. In another medium mixing bowl, mix together the flour, cold unsalted butter cubes, golden powdered sugar, oats and flaked almonds. Using your fingertips, rub the butter into the dry ingredients until it resembles coarse breadcrumbs.
  5. Spread about two-thirds of this crumb mixture evenly over the bottom of the prepared cake pan. Save the remaining third for later.
  6. In a large bowl, toss the gooseberries with the powdered sugar until well coated. Spread the gooseberries over the streusel mixture in the cake pan.
  7. Sprinkle the remaining third of the crumb mixture over the gooseberries.
  8. Bake the cake in the preheated oven for about 50-60 minutes or until the top is golden brown and a skewer inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
