  • 500g couscous
  • 1 cube of vegetable broth
  • 2 tsp turmeric
  • 1 tsp ground cinnamon
  • 100 g dried apricots, chopped
  • 3 red onions, thinly sliced
  • 1 tsp powdered sugar
  • approx. 500 ml vegetable or sunflower oil
  • Zest and squeeze 1 lemon
  • 2 tbsp olive oil
  • small bunch of coriander, chopped
  • small handful of mint, chopped, a few leaves set aside

  5. Heat enough oil to reach about 5cm above the edge of a deep saucepan.
  6. Once hot, fry the remaining onions in batches for 1-2 minutes until golden brown and crispy.
