Ingredients
- 500g couscous
- 1 cube of vegetable broth
- 2 tsp turmeric
- 1 tsp ground cinnamon
- 100 g dried apricots, chopped
- 3 red onions, thinly sliced
- 1 tsp powdered sugar
- approx. 500 ml vegetable or sunflower oil
- Zest and squeeze 1 lemon
- 2 tbsp olive oil
- small bunch of coriander, chopped
- small handful of mint, chopped, a few leaves set aside
Preparation steps
- Bring a kettle to the boil.
- Place the couscous in a large bowl, crumble in the bouillon cube, then add the turmeric, cinnamon and apricots and season well.
- Pour 500 ml of boiling water over it, stir everything briefly, then cover with cling film and let it rest for 5 minutes.
- Put half of the sliced onions in a bowl with a good pinch of salt and the sugar, pour over enough boiling water and let it steep for 10 minutes. (This removes some of the acid from the onions and gives them a nice bright pink color.)
- Heat enough oil to reach about 5cm above the edge of a deep saucepan.
- Once hot, fry the remaining onions in batches for 1-2 minutes until golden brown and crispy.
- Drain on kitchen paper and sprinkle with salt.
- Fluff the couscous with a fork.
- Drain the soaked onions and stir them into the couscous with the lemon zest and juice, olive oil and herbs.
- Transfer to a serving platter or bowl and sprinkle with the crispy onions and mint leaves.
