  • 2 red peppers
  • 1 thin baguette
  • 2 tbsp olive oil
  • 200 g solid goat cheese, e.g. B. Capricorn
  • large bunch of flat-leaf parsley
  • ½ red onion
  • a handful of black olives
  • large bag of mixed leaf salad with frisée and radicchio or red chicory
  • 6 tbsp olive oil
  • 2 tbsp walnut oil
  • 2 tsp Dijon mustard
  • 4 tbsp white wine vinegar

Preparation steps

  1. Quarter the peppers and remove the seeds and membrane.
  2. Place the peppers, skin side up, under a broiler and cook until the skins are blackened.
  3. Cover the peppers tightly with a sheet of foil until they are cool enough to handle, then peel off the peel.
  4. Cut the peppers into strips and place in a medium bowl.
  5. Cut 16 slices from the baguette and place on a baking tray.
  6. Brush the baguette slices with olive oil.
  7. Cut 16 slices of goat cheese and place a slice on each piece of bread.
  8. Wrap the bread with cling film and refrigerate until ready to bake.
  9. Roughly chop the parsley.
  10. Finely chop the red onion.
  11. Halve the olives and stone them.
  12. Add the parsley, red onion and olives to the bowl with the red peppers and mix.
  13. Put the ingredients for the dressing in a screw-top jar with salt and pepper.
  14. Shake the jar well to mix the dressing.
  15. Preheat the oven to fan 180°C/fan 200°C/gas 6.
  16. Bake the toasts for 10 minutes, until the cheese is melted and the bread is crispy.
  17. Meanwhile, spread the lettuce leaves on a serving platter.
  18. Sprinkle the red pepper mixture over the lettuce leaves.
  19. Drizzle three quarters of the dressing over the top and toss the salad.
  20. Tuck the toast between the sheets.
  21. Drizzle the remaining dressing over the toasts.

  1. Preheat the grill or oven to the highest setting. Place the red peppers on a baking sheet and grill or roast them until the skin blisters and blackens. Place the peppers in a bowl, cover with a plate and let cool.
  2. In the meantime, cut the baguette into thin slices. Place the slices on a baking sheet, drizzle with olive oil and grill or bake until golden brown and crispy. Put aside.
  3. Remove the blackened skin, seeds, and stems from the cooled red peppers, then slice them into thin strips.
  4. Cut the goat cheese into thick slices and then place under the grill or in the oven until golden brown and slightly melted.
  5. Finely chop flat-leaf parsley and red onion.
  6. In a large mixing bowl, combine lettuce leaves, red bell pepper, black olives, chopped parsley and red onion.
