  • 200 g butter, soft
  • 200g golden powdered sugar
  • 4 eggs
  • 175g ground almonds (to make it nut-free, see below)
  • 250g mashed potatoes
  • Zest 3 lemons
  • 2 tsp gluten-free baking powder (Supercook makes one)
  • 4 tbsp granulated sugar
  • Juice 1 lemon

Wheat-free, substitute ground almonds
Polenta or wheat-free flour.

Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas 4.
  2. Butter and line a deep, round cake tin (20cm).
  3. Mix sugar and butter until mixture is light and fluffy.
  4. Gradually add the egg, stirring after each addition.
  5. Fold in the almonds, cold mashed potatoes, lemon zest and baking powder.
  6. Pour the mixture into the prepared pan and level the lid.
  7. Bake for 40-45 minutes or until the cake is golden brown and a skewer inserted into the center of the cake comes out clean.
  8. After 10 minutes of cooling, turn the cake out onto a wire rack.
  9. Mix granulated sugar and lemon juice.
  10. Pour the sugar and lemon juice mixture over the cake and let it drip down the sides.
  11. Allow the cake to cool completely before cutting.
