  • approx. 600 g marzipan
  • 140g apricot jam
  • 1kg pack of fondant icing sugar plus a little sugar for dusting
  • different food colors
  • approx. 140g/5oz ready-to-roll fondant icing
  • Sprinkles, for decorating
  • colored cocktail sticks for decorating
  • Cards to decorate

Preparation steps

  1. Using a ruler, cut your cake into 4cm x 4cm squares with a small serrated knife, resulting in 16 mini cakes.
  2. Divide your marzipan into 16 equal pieces.
  3. Lightly dust your work surface with a little powdered sugar and roll each piece of marzipan into a thin circle.
  4. Spread the top and sides of a cake square with some jam, then turn it over to insert it into the center of the marzipan.
  5. Turn the cake upright, smooth the marzipan along the sides of the cake so it sticks, then trim any excess marzipan from the bottom.
  6. Repeat this process to cover all of your mini cakes.
  7. Place the powdered sugar in a large mixing bowl and stir in just enough water to create a thick but pourable glaze.
  8. Divide the icing into as many bowls as you want different colors and add a little food coloring to each.
  9. Place your cakes on a rack in a tray or on paper towels.
  10. Drizzle some frosting over each cake until the top and sides are covered – you can repeat the process until all the frosting is used up.
  11. Leave on for 4 hours, preferably overnight.
  12. Divide the rolled icing into 16 equal balls.
  13. Add a splash of water to a shallow saucer and sprinkle the sprinkles into others.
  14. One at a time, roll each icing ball in the water to moisten it, then immediately roll it into sprinkles to cover (if kids are helping and the balls get too wet, have them roll the balls on damp pieces of paper towels instead ).
  15. Pierce each ball with a cocktail stick and leave it next to the cake.
  16. Finally, cut the card into small flags and attach them to the sticks with some adhesive tape.
  17. Add a name, number or Christmas message to each and let the celebrations begin!
