Ingredients

  • 4½ kg medium ham or lightly smoked bacon
  • 900ml/1½ pints dry cider
  • 2 onions, quartered
  • 2 large carrots, halved
  • 3 fresh bay leaves
  • a handful of parsley stalks
  • 6 cloves
  • 8 peppercorns
  • 2 oranges, halved, for garnish
  • 8 tbsp finely chopped whiskey jam
  • 500 ml milk
  • 100g fresh parsley, set aside stems and chopped leaves
  • 2 bay leaves
  • 50g plain flour
  • 100 ml double cream

Preparation steps

  1. Weigh the roast and calculate the poaching time. Allow 25 minutes per 450g/1 pound
  2. Place the roast in a very large pot and cover with cold water
  3. Bring the water to a boil and then drain all the water
  4. Pour 600ml/1 pint cider into the pan
  5. Pour enough cold water to cover the joint
  6. Add onions, carrots, bay leaves, parsley stalks, cloves and peppercorns to the pan
  7. Bring the mixture to a boil, then reduce the heat, cover and simmer gently for the calculated time
  8. Let the roast cool in the broth overnight
  9. Preheat the oven to 180°C/gas 4/fan 160°C
  10. Lift the joint out of the broth and strain the broth until you measure 500ml/18 fl oz
  11. Remove the rind from the roast and score the fat in a diamond shape
  12. Place the roast in a heavy roasting tin and pour the remaining apple cider over it
  13. Braise the roast in the oven for 45 minutes to 1 hour, basting frequently, until it begins to brown
  14. If the pan becomes dry, splash in some apple cider or water to cover the bottom of the can
  15. Place milk, parsley stalks and bay leaves in a saucepan and bring to the boil
  16. Let the mixture steep for as long as desired
  17. Remove the roast from the oven and increase the temperature to 200 °C/gas 6/fan 180 °C
  18. Place orange halves around the joint
  19. Melt the jam and spread it over the ham and oranges
  20. To glaze, put the roast back in the oven for 10 minutes
  21. Remove the ham and oranges to a serving platter, cover and keep warm
  22. Sprinkle flour into the roasting pan and mix with the pan juices
  23. Place the dish on the stove and cook for a few minutes to cook out the flour
  24. Gradually pour in the measured broth and stir well
  25. Add the strained milk and bring to a boil
  26. Reduce the heat and simmer for 10 minutes
  27. Strain the sauce into a clean pot
  28. Stir in chopped parsley leaves and cream
  29. Gently heat the sauce and check the seasoning
  30. Pour into a warm jug and serve with the roast
