Ingredients

  • tasteless oil for greasing
  • 1 store-bought large Madeira cake
  • 250 ml double cream
  • 2 tbsp powdered sugar
  • a few sprinkles (optional)
  • 2 gelatin sheets
  • 200 ml cream
  • 3 tbsp sweet sherry
  • 100g mascarpone
  • 4 tbsp powdered sugar
  • 2 gelatin sheets
  • 3 tbsp pudding powder
  • 3 tbsp powdered sugar
  • 400 ml milk
  • 135g pack of raspberry jelly
  • 350g frozen raspberries, thawed

This recipe requires a lot of chilling and chilling – set aside a morning or afternoon to tackle this.

Preparation steps

  1. Grease a 900g loaf tin and then line it with cling film – as smooth as possible.
  2. Use a long strip of baking paper to line the bottom and ends of the tin, leaving a little overhang at each end to make it easier to pull the loaf out later.
  3. Cross another piece of parchment over one another to line the base and longer sides.
  4. For the cream layer, soak the gelatine in cold water.
  5. Gently heat the cream and sherry in a saucepan.
  6. When the gelatin is soft, squeeze out excess water, remove the cream from the heat and stir in the gelatin until dissolved.
  7. Gently stir in the mascarpone and powdered sugar until smooth, then scrape into the mold and tap a few times until evenly combined.
  8. Chill until firm, about 1 hour.
  9. Begin each subsequent layer while the previous layer cools.
  10. For the cream layer, soak the gelatine in cold water.
  11. Prepare the custard according to the package instructions, but use the quantities we indicate.
  12. When the gelatin is soft, squeeze out excess water, remove the cream from the heat and stir in the gelatin until melted.
  13. Place cling film directly on the surface of the custard to prevent a skin from forming, then allow to cool.
  14. Once at room temperature, scrape the set cream layer into the mold as above.
  15. Chill again until firm.
  16. Prepare the raspberry jelly according to the package instructions, but use 300 ml of water.
  17. Mix with 150 g of raspberries and then sieve.
  18. Allow to cool to room temperature, then sprinkle the remaining raspberries over the solidified vanilla sauce in the mold.
  19. Pour over the raspberry jelly and chill until the jelly is almost solid.
  20. Trim the brown edges from the Madeira cake, then cut it lengthwise into large 1.5-2cm thick slices.
  21. Cover the jelly with a sponge like a puzzle, using as few pieces as possible.
  22. Press lightly into the jelly to stick, then cover with cling film and refrigerate until completely solid, ideally overnight.
  23. To serve, turn the can upside down onto your serving plate.
  24. Using the excess parchment paper, remove the loaf from the pan and carefully peel off the plastic wrap and then the parchment.
  25. Whip the last 250ml of cream with the sifted icing sugar until thick enough to hold its shape.
  26. Pour into a food bag, cut off the corner and pipe onto the top.
  27. Sprinkle with sprinkles if desired.
