  • 175g gluten free flour (we used Doves Farm, widely available)
  • 85g butter
  • a pinch of cayenne pepper
  • Mix 1 egg yolk with 3 tablespoons cold water
  • 100g gluten-free breadcrumbs (we used Dietary Specials gluten-free bread)
  • 100g Caerphilly cheese, grated
  • 1 small leek, finely chopped
  • 1 teaspoon mustard seeds, crushed
  • 3 egg yolks
  • a handful of tarragon or thyme leaves (optional)

Prepare until the end of step 2 and then freeze in an airtight plastic box. Bake from frozen for another 5-10 minutes.

Preparation steps

  1. Prepare the dough by combining the flour, butter, and cayenne pepper in a food processor.
  2. Process the ingredients until they resemble fine breadcrumbs.
  3. Sprinkle egg-water mixture onto flour and pulse again until mixture begins to come together.
  4. Transfer the mixture to a board and gently press it together until it forms a ball. Add more water if necessary.
  5. Divide the dough mixture in half and roll each piece into a 12 x 30 cm rectangle.
  6. Place the dough rectangles on a baking sheet without cooling them.
  7. Preheat the oven to 200°C/fan 180°C/gas 6.
  8. In a food processor, combine the filling ingredients except for one egg yolk, which will be used for glazing.
  9. Divide the filling mixture in half and roll each half into a 30cm sausage shape.
  10. Place a cheese sausage on one side of the dough and brush the sausage and dough with egg wash.
  11. Fold the dough over the sausage to encase it and seal both edges. Trim the ends and cut the roll into 2cm pieces.
  12. Arrange the pieces on a baking tray and chill for 30 minutes.
  13. Brush the cooled rolls with a little egg yolk and top with herbs if desired.
  14. Bake the rolls for 12-15 minutes or until they turn golden brown.
