  • 300 ml cream
  • ½ vanilla bean
  • 25g powdered sugar
  • 1 small orange, peeled
  • 2 meringue nests, crushed
  • 25g ginger biscuits, crumbled
  • 350 ml orange juice
  • 100g powdered sugar
  • ½ vanilla bean
  • 2 tsp cornstarch

Preparation steps

  1. Line 6 small ramekins or teacups with plastic wrap, or use a silicone muffin pan if you have one.
  2. In a large bowl, whip the cream until it just holds its shape.
  3. Scrape the pulp from the vanilla pod and add it to the cream with the sugar, orange peel and meringue.
  4. Stir gently and then add the ginger nut crumbs.
  5. Divide between the prepared molds or teacups and freeze for at least 2 hours.
  6. For the sauce, put the orange juice, sugar and vanilla pod in a saucepan.
  7. Bring to a boil and then simmer until the sugar has dissolved.
  8. Place the cornstarch with 2 tablespoons of the orange juice mixture in a small bowl. Stir until smooth, then add to pan.
  9. Simmer and stir until the liquid has thickened, discard the pod and then allow to cool.
  10. The sauce can be made 2 days in advance.
  11. To serve, remove the bombs from the freezer and place in the refrigerator for 10 minutes.
  12. Turn out onto a plate, drizzle with sauce and place a small spoonful of orange sorbet next to it (see “Suitable with this”).
