Ginger-sweet tofu with pak choy

Ingredients

  • 250 g fresh firm tofu, drained
  • 2 tbsp peanut oil
  • 1cm piece of ginger, sliced
  • 200 g Pak Choi, leaves separated
  • 1 tbsp Shaohsing rice wine
  • 1 tbsp rice vinegar
  • ½ tsp dried chili flakes
  • cooked jasmine rice for serving
  • 1 tbsp grated ginger
  • 1 tsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp brown sugar

Preparation steps

  1. Use a toothpick to carefully poke a few holes into the tofu (this allows the marinade to absorb better and ensures a better taste) and then cut it into bite-sized cubes.
  2. Mix the marinade ingredients in a bowl and add the tofu pieces. Set aside to marinate for 10-15 minutes.
  3. Heat a wok over high heat and add half the peanut oil. When the oil starts to smoke, add the ginger slices and fry for a few seconds.
  4. Add the bok choy leaves and stir-fry for 1-2 minutes. Add a small splash of water to create some steam and cook for another 2 minutes.
  5. When the leaves are wilted and the stems are cooked but still a little crispy, season with salt and transfer to a serving platter.
  6. Rinse the wok under cold water, heat it again and add the remaining oil.
  7. When it starts to smoke, add the tofu pieces (reserving the marinade) and stir-fry for 5-10 minutes.
  8. Be careful not to break the tofu when turning it so that it browns evenly on all sides. Season with rice wine and rice vinegar.
  9. Add the remaining marinade liquid, bring to a bubble and allow the liquid to reduce.
  10. Sprinkle the chili flakes on top and mix well. Pour over the pak choi and serve immediately with jasmine rice, if desired.
