  • 450g self-raising flour, plus some flour for dusting
  • 1 tsp ground ginger
  • 100g unsalted butter, chilled, diced
  • 75g powdered sugar
  • 250 ml buttermilk
  • 1 egg white, lightly beaten
  • 1 tbsp granulated sugar

Preparation steps

  1. Preheat the oven to 220°C/200°C fan/gas. 7. Sift flour, ginger and a pinch of salt into a large mixing bowl.
  2. Add the butter and cut into the mixture with a round knife.
  3. Rub the butter into the flour with your fingers until it resembles fine breadcrumbs.
  4. Add the powdered sugar and stir.
  5. Make a well in the middle, add the buttermilk and stir in again with the knife.
  6. Once the dough comes together, use your hands to form it into a ball.
  7. Transfer to work surface and knead very lightly for 30 seconds until almost smooth.
  8. Lightly dust the work surface with flour and roll or press the dough into a square about 2cm thick.
  9. Trim the edges with a long knife and then cut the dough into 6-7cm squares.
  10. Arrange the squares on a baking sheet, brush the top with the beaten egg white and sprinkle with granulated sugar.
  11. Bake on the middle rack of the oven for about 10 minutes, until the dough has risen well and is golden brown.
  12. Serve warm with rhubarb-ginger jam and clotted cream.
