Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Place the pancetta on a baking sheet and stack another baking sheet on top. Bake in the oven for 15 minutes until crispy, then remove and drain on kitchen paper.
  3. To make the tomato fondue, place the tomatoes in batches in boiling water for 8 seconds, then quickly transfer them to a bowl of ice-cold water. Peel off the skin, then quarter and remove the seeds.
  4. Cut a few tomatoes into 1/2-inch squares and save them for later.
  5. Pour the oil into a medium sized pan. Add shallots, garlic and thyme and cook until softened, 5 minutes.
  6. Add bay leaves and tomato puree and cook for a few more minutes.
  7. Finally add the tomatoes and cook for 15 minutes until slightly dry.
  8. Discard the bay leaves, then add the tomato mixture to a blender and blend until smooth.
  9. Sieve, season and keep warm. You can make this up to two days in advance and refrigerate.
  10. Place the butter in a frying pan and heat until foaming.
  11. Fry the bread until golden brown all over, remove and drain on kitchen paper.
  12. Add the mushrooms to the same pan and fry until soft, 2 minutes. If the pan is too dry, add an additional dollop of butter.
  13. Carefully add the egg yolks, one at a time, to a pot of boiling water. Cook for 1 minute, then carefully remove and drain on kitchen paper.
  14. To serve, place the tomato fondue on each of the 6 plates and sprinkle with the mushrooms.
  15. Carefully add an egg yolk on top and sprinkle with the croutons and the reserved tomatoes.
  16. Finish with a slice of pancetta and season.
