Ingredients

  • Butter or oil for greasing
  • 50g plain flour
  • 3 tbsp cornstarch
  • 1 teaspoon Baking powder
  • 4 eggs, separated
  • 175g powdered sugar
  • 295 g can of tangerine segments, drained
  • 200 g cup of low-fat cream cheese
  • Powdered sugar, for dusting

Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas 4.
  2. Grease the bottom and sides of 2 x 20cm sandwich tins and place baking paper on top.
  3. Sift together flour and baking powder.
  4. Beat the egg whites until stiff with an electric hand mixer, then briefly stir in the sugar.
  5. Beat the egg yolks quickly and then stir them into the egg whites.
  6. Fold in the dry ingredients with a large metal spoon, then pour the mixture into the molds and smooth the sides.
  7. Bake for 18-20 minutes, until the dough has risen and is light golden and a skewer inserted into the center comes out clean.
  8. Allow to cool in the tins for 10 minutes, then carefully remove and allow to cool completely.
  9. Mix tangerines and cream cheese.
  10. Peel off the baking paper, place the cakes with the tangerine mixture and dust them with powdered sugar to serve.
  11. Best eaten on the day it is prepared.
