Ingredients

  • 200 g peaches, nectarines or apricots (or a mixture), pitted
  • 200g strawberries or raspberries (or a mix), peeled
  • 450 ml double cream
  • ½ x 397g can of condensed milk
  • 2 tsp vanilla extract

Preparation steps

  1. Place the peaches, nectarines or apricots in a food processor and pulse until they are chopped and juicy but still have some consistency. Scrape into a bowl.
  2. Repeat step 1 with the berries, scraping them into another bowl.
  3. Place cream, evaporated milk and vanilla in a third bowl and beat until just soft peaks remain.
  4. Add about a third of the mixture to the peaches and another third to the berries and mix well.
  5. Add a drop of orange food coloring to the peach mixture and a drop of pink food coloring to the berry mixture if you want a really vibrant color.
  6. Line a 900g loaf tin or terrine tin with cling film (look for a long, thin tin, ours was 23 x 7 x 8cm) and then pour in the berry mixture.
  7. Freeze for 2 hours and chill the remaining mixtures in the refrigerator.
  8. Once the bottom layer is frozen, remove the vanilla mixture from the refrigerator and pour over the berry layer.
  9. The bottom layer should now be strong enough to support your lollipop sticks. So place them evenly spaced along the loaf pan and gently press them down until they stand straight.
  10. Place in the freezer for another 2 hours.
  11. Once the vanilla layer is frozen, pour it over the peach mixture and spread it around the lollipop sticks.
  12. Place in the freezer for another 4 hours or until completely frozen.
  13. Remove from the freezer 10 minutes before serving.
  14. Use the plastic wrap to release the bread from the pan.
  15. Place it on a board and cut out individual lollipops for your guests.
  16. Any leftovers can be stored in the freezer for up to 2 weeks.
