Ingredients

  • 100 g butter or baking spread (stork for cakes), softened, plus a little butter for the mold
  • 175g self-raising flour
  • 50g ground almonds
  • 2 teaspoons of baking soda
  • 4 large eggs
  • 225g powdered sugar
  • 125 ml full Greek yogurt
  • Zest 2 lemons
  • 175g butter, softened
  • 350g powdered sugar, sifted
  • 300g raspberries
  • 175g blueberries

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Grease a 30 x 20 cm baking tin with butter and line it with baking paper.
  3. Put all the sponge cake ingredients in a mixing bowl and beat until smooth using an electric hand mixer.
  4. Pour the mixture into the mold and level the surface.
  5. Bake for 25-30 minutes, until lightly golden brown and the top of the cake springs back when pressed with a finger and the edges of the sponge cake shrink away from the edge of the tin.
  6. Carefully lift the sponge cake out of the tin and place it on a wire rack to cool.
  7. Remove the baking paper.
  8. To make the glaze, place the butter in a bowl and beat with an electric mixer until light and fluffy.
  9. Add half the powdered sugar and mix again until incorporated.
  10. Add the remaining sugar and mix again until smooth.
  11. Spread the icing over the top of the cold cake.
  12. To decorate, arrange a double row of raspberries crisscross in the center of the cake.
  13. Next, place a single row diagonally from each corner to the center.
  14. Fill in the empty spaces with blueberries.
  15. Cut into squares to serve.
