  • 1 finished puff pastry sheet weighing 320 g
  • 1 tbsp flour
  • 1 teaspoon vegetable oil for greasing
  • 2 tbsp sultanas
  • Eat 2 apples
  • 2 pears
  • 2 tbsp clear honey
  • 3 tbsp apricot jam
  • Pinch of spice mixture
  • Pinch of cinnamon
  • 1 egg
  • To serve with crème fraîche or vanilla ice cream

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Roll out the dough on a lightly floured work surface into a large rectangle.
  3. Place the dough on a lightly greased baking sheet.
  4. Place the sultanas in a small mixing bowl with enough warm water to cover them and let them soak for 10 minutes.
  5. Core the apples and pears and cut them into equal pieces – no peeling is necessary.
  6. Place the apple and pear pieces in a bowl and add honey and 2 tablespoons of apricot jam.
  7. Drain the soaked sultanas and add them to the bowl.
  8. Stir well and add mixed spices and cinnamon to taste.
  9. Spread the mixture in a thick strip down the middle of the puff pastry.
  10. Using a sharp knife, make about 8 diagonal lattice-like cuts on each side of the dough.
  11. Fold the strips of dough alternately over the filling like a braid.
  12. Place the egg in a bowl and beat with a fork.
  13. Using a pastry brush, brush the top of the puff pastry with the beaten egg.
  14. Place the braid in the oven and bake for 25 to 30 minutes or until the apples are soft and the dough is golden brown.
  15. Serve with crème fraîche or vanilla ice cream.
