Ingredients

Preparation steps

  1. Soak the cashews in boiling water for 10 minutes, or overnight in cold water if you have time.
  2. Lightly oil a square cake tin (20 x 20 cm).
  3. For the base, pulse the almonds and dates in a food processor until very finely chopped.
  4. Pour the almond and date mixture into the prepared pan.
  5. Press the mixture down and smooth it with the back of a spoon until it is evenly distributed over the base.
  6. Place the pan in the freezer to firm up while you prepare the “cheesecake” layer.
  7. Drain the cashews and place half in the food processor.
  8. Add the ingredients for the “cheesecake” layer to the food processor.
  9. Puree until you get a smooth and creamy consistency.

  15. Place in the freezer for at least 1 hour to set.
  16. Stores in the freezer for up to 2 months.
  17. Remove from the freezer 10 minutes before serving, then cut into 10-12 bars and enjoy.
