Ingredients
- 100g soft butter
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 6 slices of prosciutto (85g pack)
- 6 x 175g skinless and boneless chicken breast fillets
- 2 x 400g cans of chopped tomatoes
- 150 ml chicken or vegetable stock
- 4 sprigs oregano, leaves removed and chopped
- 400g canned cannellini beans, drained and rinsed
- 1 ciabatta loaf, cut into 12 slices
- 250g cherry tomato basket, halved
- 18 basil leaves, half chopped, half left whole
- To serve, toss mixed lettuce leaves with your favorite dressing
Preparation steps
- Mix the butter in a bowl with half the garlic.
- Prepare everything in bowls or on plates to take away.
- Light the barbie.
- Heat a sturdy roasting pan on the grill rack and place the oil to cover the bottom of the pan.
- Add the prosciutto and fry until crispy on both sides.
- Put it aside.
- Season the chicken and fry on both sides in the pan.
- Stir in the rest of the minced garlic and add the chopped tomatoes, stock and oregano.
- Simmer for 3 minutes, turn the breasts over and simmer for another 3 minutes.
- Add the cannellini beans, turn the chicken and simmer for another 3 minutes.
- Turn again and simmer for another 3 minutes.
- Now taste the sauce and add some seasoning if necessary.
- Towards the end of the chicken’s cooking time, toast the ciabatta on both sides on the barbie – depending on the size of your barbie, you may need to do this in batches.
- Add the tomatoes and chopped basil to the chicken mixture.
- Allow the tomatoes to soften a little, then top with the crispy prosciutto and sprinkle it all over the basil leaves.
- Spread the garlic butter over the ciabatta and place it around the edge of the chicken, butter side up.
- Or place the bowl of garlic butter on the table so guests can spread their own butter.
- Serve hot with mixed leaf salad.
