  1. Place the couscous in a large heatproof bowl, pour over the stock and then cover with cling film for 5 minutes until the liquid is absorbed.
  2. Melt half the butter in a pan, then lightly fry the onion and garlic until softened, 5-8 minutes. Put aside.
  3. Dry fry the pine nuts for a few minutes until golden brown.
  4. Mix onions, pine nuts, apricots and herbs with couscous.
  5. Add a good squeeze of lemon juice, season and then stir in the egg. Let cool down.
  6. Using the back of a knife, stretch the slices to one and a half times their original length.
  7. Place slightly overlapping on a large sheet of foil to form a rectangle.
  8. Make a few cuts in the thickest part of each chicken breast and place between 2 layers of plastic wrap.
  9. Use the bottom of a heavy skillet to pound the chicken until it is about 1cm thick.

  11. Spread the filling over the chicken in a strip along one of the longest sides.
  12. Using aluminum foil, roll the bacon and chicken around the filling like a log.
  13. Wrap tightly in foil, twisting ends tightly, then chill for 2 hours or up to 1 day.
  14. Preheat the oven to 180°C/fan 160°C/gas 4.
  15. Place the chicken, joint side down, in a roasting tray.
  16. Let it cook for 30 minutes, then unwrap the foil and brush the roast with the remaining butter.
  17. Cook, uncovered, for another 20-30 minutes, until the filling is cooked through and hot (a metal skewer inserted into the center of the chicken should come out hot).
  18. Allow to cool and wrap in fresh foil for transport.
