Ingredients

  • 8 chicken fillets or fillets
  • Sunflower oil, for deep frying
  • 320g plain flour
  • 1 tbsp cornstarch
  • 3 tsp baking powder
  • 2 teaspoons cayenne pepper
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 3 eggs
  • 300 ml buttermilk
  • 3 teaspoons chili powder or cayenne pepper
  • 2 tsp garlic powder
  • 320g plain flour
  • 1 ¼ tsp baking powder
  • 1 tsp baking soda
  • 30 g light brown soft sugar
  • 3 eggs
  • 480 ml buttermilk
  • 50g unsalted butter, melted and slightly cooled
  • 4 strips pancetta, cooked and finely chopped (optional)
  • Garlic sauce (store-bought, or see our recipe below)
  • Handful of arugula
  • Tomatoes, chopped or sliced

Preparation steps

Method:

  1. Mix all the buttermilk marinade ingredients together, then add the chicken and stir to combine.
  2. Cover and chill for at least 2 hours. Keep refrigerated for 24 hours.
  3. Mix the ingredients for the breading, except the eggs, with 1 teaspoon of salt. Mix well.
  4. Whisk the eggs in a separate bowl.
  5. One at a time, remove the chicken fillets from the marinade, add them to the coating mixture, then turn in the egg and turn them into the coating mixture again.
  6. Arrange on a foil-lined baking sheet.
  7. To make the waffle, mix together the flour, baking powder, bicarb and brown sugar.
  8. Add ½ teaspoon each salt and black pepper.
  9. Beat the eggs and then gently stir them into the dry mixture.
  10. Add the buttermilk and stir until smooth, then stir in the melted butter.
  11. Mix in the pancetta, if using.
  12. To fry the chicken, heat a pot one-third full of sunflower oil over medium-high heat to 350°F or until a piece of bread browns within 30 seconds.
  13. Fry the chicken in batches until it is golden brown on both sides and cooked through.
  14. Gradually transfer to a plate lined with paper towels and set aside to drain.
  15. If the chicken fillets are browning too quickly, reduce the heat.
  16. Bake the waffles in a waffle maker or iron for 5-6 minutes until cooked and golden brown.
  17. Halve each waffle.
  18. Top the bottom halves with garlic sauce, arugula, tomatoes and chicken fillets and then top with the other half of the waffle.
  19. Serve immediately.
