  • 200g unsalted butter
  • 6 egg whites
  • 75g flour
  • 2 tsp ground cinnamon
  • a pinch of grated nutmeg
  • a pinch of ground ginger
  • 200g powdered sugar, plus a little sugar for dusting
  • 140g ground almonds

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Place the butter in a small saucepan and heat until it foams and browns.
  3. Remove from heat and pour through a sieve, then allow to cool.
  4. Remove the white solids, leaving just the melted butter.
  5. Grease 10 holes of a friand or muffin tin with a little butter.
  6. Beat the egg whites in a large bowl until fluffy.
  7. Sift over the flour, spices and powdered sugar.
  8. Sprinkle with ground almonds and pour in the cooled butter.
  9. Fold into the egg whites and stir until there are no lumps.
  10. You can refrigerate the friand mixture for two days at this point before baking.
  11. Fill each hole with some of the mixture and place the mold or tins on a baking tray.
  12. Bake for 18-20 minutes, until the friands have risen and are golden brown and springy to the touch.
  13. Remove from oven and allow to cool for about 5 minutes before transferring to a wire rack.
  14. Eat it slightly warm or completely cool, but it is best to eat the friands on the day they are baked.
  15. Before serving, dust with chestnut flour and powdered sugar (see “Suitable with this”).
