Ingredients

  • 1.2l milk
  • 100g butter, cut into pieces
  • 100g plain flour
  • Pinch of freshly grated nutmeg
  • 500g baby spinach leaves
  • 250g lasagna sheets – fresh is best
  • 3 tablespoons good quality pesto
  • 500g cherry tomatoes on the stem, two or three stems left whole
  • good handful of basil leaves (or a supermarket pack)
  • 175g piece of fresh Parmesan (or vegetarian alternative), coarsely grated
  • 2 x 150g balls of mozzarella, preferably buffalo, torn into bite-sized pieces

Preparation steps

  1. Preheat the oven to 200°C/gas 6/fan 180°C.

  2. Place milk, butter and flour in a medium saucepan and cook over medium heat, stirring, until thickened and smooth.

  3. Simmer the mixture for 1 minute.

  4. Remove the pan from the heat, season the mixture and add the nutmeg.

  5. Cool the mixture, stirring occasionally to prevent a skin from forming.

  6. Place the spinach in a large heatproof bowl.

  7. Pour boiling water over a kettle and let stand for 30 seconds.

  8. Drain the spinach in a colander.

  9. Cool the spinach under the cold tap.

  10. Squeeze the spinach well to remove excess liquid.

  11. Spread a spoonful or two of the sauce in the bottom of a large ovenproof dish.

  12. Place a third of the lasagne on top of the sauce.

  13. Pour in a third of the sauce and spread it evenly.

  14. Swirl a spoonful of pesto through the sauce with a knife.

  15. Scatter half of the spinach over the sauce.

  16. Add a third of the tomatoes, a few basil leaves and a third of the cheese.

  17. Season the layer with salt and pepper.

  18. Layer another third of the lasagna on top.

  19. Add a third of the sauce and a spoonful of pesto.

  20. Add the rest of the spinach, a third of the tomatoes and the cheese.

  21. Add some basil and season the layer.

  22. Finally place a layer of lasagne on top.

  23. Spread the rest of the sauce, the pesto, the cheese and the remaining tomatoes, including those on the vine, on top.

  24. Bake the dish for 35-40 minutes until golden brown.

  25. Scatter the last basil leaves on top.

  26. Serve the fresh lasagna with pesto.
