  • 2 tbsp sunflower oil
  • 500g zucchini, cut into thick slices
  • ½ tsp cumin seeds
  • 2 tbsp ginger, finely chopped
  • 6 garlic cloves, crushed
  • 1 red chili pepper, deseeded and finely chopped
  • 1 tsp ground coriander
  • ¼ tsp ground turmeric
  • 500g tomatoes, chopped
  • 150 ml hot vegetable broth
  • 225g pack of raw, peeled, frozen king prawns, thawed
  • ½ small bunch of coriander, roughly chopped

Preparation steps


  1. Heat the oil in a large wok and fry the zucchini for 5-6 minutes until soft. Remove from the pan with a slotted spoon, leaving the oil behind.
  2. Add the cumin seeds to the pan and toast for a few seconds, then add the ginger, garlic, chilli and spices. Cook, stirring, for 1-2 minutes, then add the tomatoes and cook for a few more minutes.
  3. Pour in the stock and simmer until a mushy sauce forms, then add the zucchini and shrimp. Cook gently until the shrimp change color from gray to pink and the zucchini are tender but not too soft.
  4. Stir in most of the cilantro, reserving some to sprinkle on top. Serve with basmati rice and mango chutney if desired.
