- 500 g skinless chicken breast, diced

- ¼ cucumber, peeled, seeded and diced
- 1 small banana, diced
- Zest and juice of half a lime
- 250g pack of fully cooked brown basmati rice
- Place the onions in a food processor along with the garlic and ginger.
- Puree until as smooth as possible, then add half the stock and puree again.
- Heat a large non-stick pan, sprinkle in the spices and roast for 1 minute.
- Add the onion mixture, the remaining broth and all but 1/2 teaspoon of the chopped chili.
