  • 2 large onions, quartered
  • 4 cloves of garlic
  • thumb-sized piece of ginger, peeled and roughly chopped
  • 600 ml reduced salt chicken stock
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp ground turmeric
  • 4 green cardamom pods
  • 1 large red chili pepper, deseeded and finely chopped
  • 2 tbsp ground almonds
  • 2 tbsp tomato paste
  • 500 g skinless chicken breast, diced
  • small packet of cilantro, chopped
  • 1 small red onion, finely chopped
  • ¼ cucumber, peeled, seeded and diced
  • 1 small banana, diced
  • Zest and juice of half a lime
  • 250g pack of fully cooked brown basmati rice

Preparation steps

  1. Place the onions in a food processor along with the garlic and ginger.
  2. Puree until as smooth as possible, then add half the stock and puree again.
  3. Heat a large non-stick pan, sprinkle in the spices and roast for 1 minute.
  4. Add the onion mixture, the remaining broth and all but 1/2 teaspoon of the chopped chili.
  5. Add the almonds and tomato puree and mix well.
  6. Simmer for 35 minutes until the mixture is completely soft, stirring occasionally and adding a little water if the mixture sticks to the bottom of the pan.
  7. Add the chicken and half the fresh cilantro.
  8. Heat very gently for 10 minutes to cook the chicken through.
  9. Mix all sambal ingredients with the remaining coriander and chili.
  10. Heat the rice according to package instructions.
  11. Serve chicken and sambal with brown rice.
