  • 1 large chicken, about 1.8kg
  • 2 lemons, halved
  • 2 cloves garlic, halved in half, plus 2 cloves garlic, crushed
  • 50 g butter, soft
  • 2 tsp Ras-el-Hanout spice mix
  • 1 teaspoon smoked paprika, optional
  • 200g cup of Greek yogurt

Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. Place half a lemon and half a clove of garlic into the chicken cavity, then place in a roasting tray.
  3. Mix butter, garlic and half of the spices and spread over chicken breasts and legs. Season well.
  4. Can be prepared up to a day in advance and stored covered in the refrigerator.
  5. Add the remaining garlic to the tray and roast the chicken for 1 hour.
  6. Mix the remaining spices into the yoghurt and season.
  7. Remove chicken from oven and cover with yogurt.
  8. Pour some juice over it.
  9. Add the remaining lemon to the tray, then roast for 15 minutes or until the yogurt is golden brown and firm and the juice runs clear.
  10. Lift the chicken onto a board, cover and let rest for 10 minutes before cutting into pieces.
  11. Serve hot or cold.
