  • 140g spelled flour
  • 75g flour
  • 1 teaspoon Baking powder
  • 100 ml olive or coconut oil
  • 1 egg, lightly beaten (optional)
  • 2 tbsp olive oil
  • 3 onions, thinly sliced
  • 10 dried juniper berries, crushed into powder
  • 100 ml red wine
  • 2 tsp honey
  • 8 blackberries
  • 200g wild or cultivated mushrooms, cleaned and cut into bite-sized pieces
  • 2 cloves of garlic, minced
  • a few sprigs of rosemary or thyme, leaves finely chopped
  • 150g pack of vegetarian goat cheese or sheep cheese

Preparation steps

  1. Mix flour, baking powder and a little sea salt in a large bowl.
  2. Pour in the oil and gradually add 125 ml of lukewarm water.
  3. Knead the mixture on a floured work surface until a smooth dough forms.
  4. Add more flour if the dough is too sticky or a little oil if it is too dry.
  5. Divide the dough into four balls.
  6. Roll each ball into a circle 12cm wide and 1cm thick.
  7. Use your fingers to roll or bend the edges inward to create a rustic crust.
  8. Place a large skillet over medium heat.
  9. Bake the tart cases for 3-4 minutes or until the bottom is golden brown (in batches).
  10. Transfer the tart pans to a baking sheet.
  11. Brush the molds with the egg (optional).
  12. Bake the tart cases for 10 minutes.
  13. Heat half the oil in a frying pan, then fry the onions until softened, about 10 minutes.
  14. Add the juniper and some spice and cook for another minute.
  15. Pour in red wine and honey.
  16. Stir in the blackberries and mash them with the back of a spoon.
  17. Cook for 3-5 minutes until the mixture forms a sticky but slightly moist glaze.
  18. Set the filling aside.
  19. Heat remaining oil in a frying pan.
  20. Fry mushrooms and garlic over high heat until golden brown.
  21. Sprinkle most of the rosemary or thyme over the mushrooms and season.
  22. Remove from heat.
  23. Spread the bottom of each tart with a layer of sticky onions.
  24. Divide the mushrooms among the individual tartlets.
  25. Crumble the cheese over it.
  26. Sprinkle with the remaining herbs and a drizzle of oil.
  27. Bake the tarts for 10 minutes or until the cheese is melted and lightly golden brown.

They will last up to 1 month in the freezer. To defrost, remove them from the freezer and let them thaw in the refrigerator overnight. Warm up as described above.
