Ingredients

  • 2 lemons
  • 140g butter, softened, plus a little butter for greasing
  • 3 eggs
  • 250g golden powdered sugar
  • 200g ground almonds
  • 175g polenta or fine corn flour
  • 1 tsp gluten-free baking powder
  • Mascarpone, for serving

  7. Scrape the batter into the cake pan and bake for 40-50 minutes, until golden brown and starting to pull away from the sides.
  8. While the cake is baking, drizzle it by mixing the sugar with the lemon juice.
  9. When the cake is ready, remove it from the oven and let it cool slightly.
  10. Pour over the drizzle while still warm and allow to cool completely.
  11. Serve with mascarpone.
