  • 2 tablespoons olive oil, plus some for drizzling
  • 2 garlic cloves, sliced
  • 400 g chopped canned tomatoes
  • 400g frozen spinach, thawed

  • 7 g bag of fast-acting dry yeast

  2. Place 1 teaspoon salt on one side of the bowl and the yeast on the other.

  7. Then add the tomatoes, season and simmer for 5 minutes until the sauce has thickened.
  8. Preheat oven to 220°C/200°C fan/gas 7.
  9. Knead the dough for a few minutes, then cut it in half and roll each half out as thinly as possible.
  10. Place each base on a baking sheet dusted with semolina.
  11. Divide the tomato sauce over the pizzas and spread almost to the edge.
  12. Spread the spinach over it, add the toppings and drizzle with a little oil.
  13. Bake for 5 minutes, then crack an egg onto each pizza.
  14. Swap the baking sheets and then bake for another 10 minutes or until the crusts are baked through.
  15. Drizzle the basil and rocket with a drop of oil and lemon juice.
  16. Sprinkle over pizza before eating.
