  • 175g lightly salted butter, softened
  • 85g golden powdered sugar
  • ½ tsp vanilla extract
  • 225g flour, plus some flour for dusting
  • ¼ tsp ground cinnamon
  • 50g butter
  • 50g light brown soft sugar
  • 50g golden syrup
  • ½ tsp salt
  • 50g plain flour
  • 75g glazed cherries, chopped
  • 75g almond flakes
  • 150g dark chocolate, chopped

Preparation steps

  1. To make the cookies, place the butter, sugar and vanilla in a bowl and beat with an electric whisk until creamy.
  2. Add the flour and cinnamon and mix with a spatula to form a soft dough.
  3. Form the dough into a ball, wrap it in cling film and let it rest in the fridge for at least 1 hour.
  4. Melt butter, sugar, golden syrup and salt in a saucepan.
  5. Remove the pot from the heat and stir in the flour.
  6. Stir in the cherries and almonds and set the mixture aside to cool and set.
  7. Preheat the oven to 180°C/160°C fan/gas mark 4 and line a baking tray with baking paper.
  8. Place the dough on a floured surface and roll out to the thickness of a £1 coin.
  9. Using a 6cm fluted cutter, cut out as many circles as possible.
  10. Gather the scraps of dough, roll them out again and cut out more circles.
  11. Transfer the circles to the baking sheet.
  12. Spoon some of the Florentine mixture onto each cookie until it is all used up.
  13. Bake on the middle rack of the oven for 12-15 minutes, until the cookies are golden brown and the topping has melted.
  14. Let the cookies cool on the tray for at least 15 minutes.
  15. While the cookies are cooling, melt the chocolate in a small heatproof bowl suspended over a pot of gently simmering water, or in short bursts in the microwave.
  16. Stir the chocolate every 30 seconds to prevent it from burning.
  17. Dip each cookie about a third of the way into the melted chocolate.
  18. Place the cookie back on the tray to allow the chocolate to set.
  19. You may need to spoon over the last few chocolate.
  20. The cookies will last up to four days in a sealed container.

Health Benefits of Florentine Cookies

Florentine cookies are not only a treat for the taste buds, but also offer numerous health benefits. These delicious treats are made from a combination of healthy ingredients and can be an excellent addition to your diet. Let’s take a closer look at some of the health benefits they offer:

1. Nutritional value

Florentine cookies contain various ingredients that contribute to their nutritional value. The butter used in the recipe is a good source of healthy fats, while the golden powdered sugar adds a touch of sweetness. In addition, plain flour is a basic ingredient that provides carbohydrates for energy.

2. Antioxidant-rich cherries and almonds

Florentine cookies also contain glazed cherries and slivered almonds, both of which bring their own health benefits. Cherries are rich in antioxidants, particularly anthocyanins, which are thought to have anti-inflammatory properties and may reduce the risk of chronic diseases.

Slivered almonds, on the other hand, are a great source of healthy fats, fiber, protein, magnesium and vitamin E. These nutrients are crucial for heart health, maintaining good digestion, strengthening bones and promoting overall well-being.

3. Dark chocolate delight

Using dark chocolate in Florentine cookies adds a touch of indulgence while offering potential health benefits. Dark chocolate is rich in flavonoids, powerful antioxidants that protect the body from oxidative stress and inflammation. Additionally, studies suggest that consuming dark chocolate in moderation could have positive effects on heart health.

4. Limited added sugar

The Florentine cookies recipe contains a moderate amount of sugar, with golden powdered sugar and golden syrup being the main sources. While it’s important to enjoy sweets in moderation, this recipe keeps the added sugar content relatively low, making it a suitable option for those watching their sugar consumption.

5. Enjoyment and mindful eating

Finally, Florentine cookies can contribute to general well-being by providing a moment of pleasure and enjoyment. Mindful eating is an essential aspect of a healthy lifestyle, and enjoying a homemade treat like Florentine cookies can promote a positive relationship with food.

With their combination of healthy ingredients and potential health benefits, Florentine cookies can be a delicious treat that you can enjoy in moderation. So why not try making a batch yourself and experience the delights they have to offer?
