Ingredients

  • 175g lightly salted butter, softened
  • 85g golden powdered sugar
  • ½ tsp vanilla extract
  • 225g flour, plus some flour for dusting
  • ¼ tsp ground cinnamon
  • 50g butter
  • 50g light brown soft sugar
  • 50g golden syrup
  • ½ tsp salt
  • 50g plain flour
  • 75g glazed cherries, chopped
  • 75g almond flakes
  • 150g dark chocolate, chopped

Preparation steps

  1. To make the cookies, place the butter, sugar and vanilla in a bowl and beat with an electric whisk until creamy.
  2. Add the flour and cinnamon and mix with a spatula to form a soft dough.
  3. Form the dough into a ball, wrap it in cling film and let it rest in the fridge for at least 1 hour.
  4. Melt butter, sugar, golden syrup and salt in a saucepan.
  5. Remove the pot from the heat and stir in the flour.
  6. Stir in the cherries and almonds and set the mixture aside to cool and set.
  7. Preheat the oven to 180°C/160°C fan/gas mark 4 and line a baking tray with baking paper.
  8. Place the dough on a floured surface and roll out to the thickness of a £1 coin.
  9. Using a 6cm fluted cutter, cut out as many circles as possible.
  10. Gather the scraps of dough, roll them out again and cut out more circles.
  11. Transfer the circles to the baking sheet.
  12. Spoon some of the Florentine mixture onto each cookie until it is all used up.
  13. Bake on the middle rack of the oven for 12-15 minutes, until the cookies are golden brown and the topping has melted.
  14. Let the cookies cool on the tray for at least 15 minutes.
  15. While the cookies are cooling, melt the chocolate in a small heatproof bowl suspended over a pot of gently simmering water, or in short bursts in the microwave.
  16. Stir the chocolate every 30 seconds to prevent it from burning.
  17. Dip each cookie about a third of the way into the melted chocolate.
  18. Place the cookie back on the tray to allow the chocolate to set.
  19. You may need to spoon over the last few chocolate.
  20. The cookies will last up to four days in a sealed container.
