Ingredients

  • 100 g soft butter
  • 2-3 tbsp chopped fresh herb mixture (parsley, chervil, dill, marjoram, basil)
  • Salt and freshly ground black pepper to taste
  • 1 tsp chopped fresh tarragon (remember, this is very strong)
  • 1-2 tbsp whole grain mustard
  • Salt and freshly ground black pepper to taste
  • 1 tbsp apple cider vinegar
  • 2 tbsp chopped fresh mint
  • Salt and freshly ground black pepper to taste
  • 1 tbsp finely chopped shallots
  • 2 tbsp chopped fresh chives
  • Salt and freshly ground black pepper to taste
  • 3 tbsp chopped fresh parsley
  • 2 tsp finely grated lemon peel
  • Salt to taste
  • ½ tsp crushed, dried chili flakes
  • 2 tablespoons finely chopped pickled dill gherkins or gherkins
  • 3 tbsp chopped fresh dill
  • Salt and freshly ground black pepper to taste

Preparation steps

  1. Take 100g of softened butter and beat it until creamy.
  2. For herb butter: Stir in 2-3 tablespoons chopped fresh mixed herbs (parsley, chervil, dill, marjoram, basil) as well as salt and freshly ground black pepper to taste.
  3. For tarragon and whole grain mustard butter: Stir in 1 teaspoon chopped fresh tarragon and 1-2 tablespoons whole grain mustard as well as salt and freshly ground black pepper to taste.
  4. For mint and apple butter: Gradually stir in 1 tablespoon apple cider vinegar, then 2 tablespoons chopped fresh mint and salt and freshly ground black pepper to taste.
  5. For chive and shallot butter: Stir in 1 tablespoon finely chopped shallots and 2 tablespoons chopped fresh chives, add salt and freshly ground black pepper to taste.
  6. For parsley, lemon and chili butter: Stir in 3 tablespoons chopped fresh parsley, 2 teaspoons finely grated lemon peel, salt to taste and ½ teaspoon crushed, dried chili flakes.
  7. For dill butter: Stir in 2 tablespoons finely chopped pickled dill gherkins or gherkins and 3 tablespoons chopped fresh dill, plus salt and freshly ground black pepper to taste.
  8. Once you’ve mixed the flavored butter, keep it ready in the fridge or freezer so you can slice it.
  9. Form rolls in wet baking paper and refrigerate until firm.
  10. Wrap again in plastic wrap, twisting each end to seal.
  11. Will last in the fridge for 4-5 days or in the freezer for up to 3 months.
