  • 50g wholemeal flour
  • 85g plant-based baking margarine
  • 100g plain flour
  • 1 large egg, beaten
  • 150 g natural Yofu (a 100% dairy-free yogurt)
  • 1 small onion, diced
  • 1 tbsp vegetable oil
  • 4 tbsp soy milk
  • Leaves from 2 sprigs of thyme, plus a few extra sprigs
  • 150 g cherry tomatoes, halved
  • 2 thick slices unsmoked bacon, chopped

Preparation steps

  1. Preheat the oven to 220°C/gas 7/fan 200°C.
  2. Place the flour in a bowl and rub it with the margarine until it resembles breadcrumbs.
  3. Mix in 4-5 teaspoons of water until a soft dough forms.

  5. Line a 20cm cake tin with the rolled out dough.
  6. Line the flan pan with baking paper.
  7. Cover the baking paper with baking beans.
  8. Bake the cake pan with baking paper and beans for 5 minutes.
  9. Remove paper and beans and bake for another 5 minutes.
  10. Let the flan cool on a rack.
  11. Reduce the oven temperature to 160°C/gas 3/fan 140°C.
  12. Heat the oil in a pan and fry the bacon and onions until crispy.
  13. Remove the pan from the heat.
  14. Mix soy milk, yofu, eggs and thyme leaves.
  15. Season the mixture well.
  16. Add the cooked bacon, onions and cherry tomatoes to the tart pan.
  17. Pour the milk mixture into the tart pan.
  18. Top the flan with additional thyme sprigs.
  19. Bake the flan for 30 minutes or until set.
