- Zest and juice of 1 lime
- 1 tbsp oil
- 1 ripe mango, peeled, pitted and diced
- 1 red chili pepper, deseeded and finely chopped
- 1 ripe avocado, peeled, pitted and diced
- 2 spring onions, sliced
- small bunch of coriander, chopped
- 200g green beans
- Rice, for serving

- Preheat oven to 200°C/180°C fan/gas 6.
- Make 3-4 cuts on each side of the fish.
- Rub in spices, lime zest and oil, making sure everything goes straight into the slots and cavity.
