- 25g butter
- 35g panko breadcrumbs
- 35g Parmesan cheese, grated
- 1 kg of mixed seafood (boneless cod and sea bream, mussels, whole shrimps), cut into large pieces and without skin
- 1.2kg potatoes
- 2 egg yolks
- 100 ml cream
- 50g dill, finely chopped
- Sea salt to taste
- Ground black pepper to taste
- 100g butter
- 200g plain flour
- 1l fish stock
- 300 ml cream
- Dijon mustard, to taste (optional)
- Season all seafood with salt, pepper and dill and mix well. Drain in a colander for 1 hour to remove excess water.
- Steam the potatoes until they are soft. Remove and puree while still hot. After pureeing, stir in the egg yolk and cream and season as desired.
- To make the velouté, melt the butter in a pan and then add the flour. Mix and set aside. Bring the fish stock to a boil, then add the cream and Dijon mustard, if using. Reduce by half, then stir in the butter and flour mixture. Cook, stirring constantly, for at least 15 minutes until the taste of flour disappears. Add a little more water if it’s too thick.
- For the topping, melt the butter in a pan and add the breadcrumbs. Sauté until golden in color.
- Place the seasoned fish and seafood in a baking dish with the velouté, adding gradually to avoid a sloppy mixture.
- Top with the mashed potato and breadcrumb mixture. Add a layer of Parmesan cheese.
- Bake at 190°C for 20 to 25 minutes until a crispy, golden coating forms.
