Filled deli rolls to tear and share

Ingredients

  • 500g pack of bread mix (we used ciabatta)
  • 145 g fresh canned pesto
  • 100 g cooked artichokes in olive oil, drained and chopped (reserve some oil)
  • 3 roasted peppers (from a jar), drained and chopped
  • 250 g ball mozzarella, chopped
  • Handful of basil, torn

Preparation steps

  1. Prepare the bread dough according to the package instructions, adding 1 tablespoon of pesto instead of the oil recommended on the package. Let the dough rise until it has doubled in volume.
  2. Brush a springform pan (23 cm) with a little arctic oil and set aside 2 tablespoons of pesto and 1 tablespoon of chopped pepper for the filling. Mix the remaining ingredients in a bowl.
  3. Divide the dough into 12 equal pieces, to be precise, using a scale. Roll each piece into a ball, then use a rolling pin to roll it out into a disk.
  4. Divide the pesto and vegetable filling among the 12 pieces of dough, then shape them back into balls by pressing the edges together and rolling until smooth. Arrange the dough balls in the cake pan with the seam side down.
  5. Cover with a piece of oiled cling film and let rise until doubled in size.
  6. Preheat the oven to 180°C/160°C fan/gas 4.
  7. Remove the cling film. Spread the rolls with the remaining pesto and distribute over the remaining peppers.
  8. Bake for 50 minutes until golden brown and cooked through.
  9. Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before placing the deli rolls in your picnic basket.
